Darth Monk Imperial Stout!
Batch XVI: A long time ago in a galaxy far, far away.... well not so long ago and in the next room our brewmaster overcame the forces of evil (a broken mash tun) to create this beer. A tremendous amount of dark malts come together to create a tempting aroma of chocolate, coffee and roast. These aromas carry through into the flavor and are balanced by an intense malty sweetness. The maltiness dissipates quickly into a dry finish. Don't be afraid of the dark side as Luke once was. 9.09%

Thirsty Monk Early Beer Series Brick Breaker Red
(Irish Red Ale)
Our latest release is just perfect for Asheville's current fall season. What with some days starting off at 50 degrees, heading up into 80, then back down to 40, who can find the right beer to drink? We have, with Brick Breaker Red! The color seems to change as much the leaves in the tree, starting from a reddish tinge in the light to a rich mahogany as you bring it closer to your mouth. The smell of toast and caramel is followed by a lightly sweet and malty taste. There is just the hint of heaviness to an otherwise light and easy-to-drink body. Brick Breaker finishes sweet then slowly transforms to a nice and dry aftertaste. 4.70%
Thirsty Monk Early Beer Series Calibration Ale
(American Blonde Ale)
Our very first batch of beer on the new brewing system. This blonde ale was used to properly calibrate everything. The result is a lightly fruity ale with a nice bitter finish. We think it's OK! 5.93%
Thirsty Monk Early Beer Series California TrainWreck IPA
(American IPA)
When asked how a day of brewing went, our brewer responded, "It's a freakin' train wreck!" Fortunately, there were no fatalities and the survivors lived to tell the tale. Three IPAs were brewed equally, sharing the same wort, hops, and near catastrophic brewing conditions. They differ only in their yeast. California Train-Wreck is brewed with California yeast, which should present a dry finish. 7.17%
Thirsty Monk Early Beer Series Golden Smonky
(Belgian Strong Pale Ale)
We've thrown everything Belgian into this strong golden ale, resulting in a beer that breaks with traditional Belgian styles. Gold in color, fruity with hints of plums and figs, sweet and barely sour, this beer just defies all categories. Is it a Tripel-and-a-half? A golden Quad? Or perhaps the most sought after Double-Blonde? We can't decide... except upon it's deliciousness. 9.30%
Thirsty Monk Early Beer Series Hotwater Hef A\B
(Hefeweizen)
"The chill water is too HOT!!" the brewer exclaimed and worked feverishly to save the beer. The batch was rescued and resulted in two different Bavarian-style Hefeweizens, batch A with Weihenstephaner yeast, and B with a unique blend. We hope these Hefs will be hot (and chilled) beers. 5.52%

Brewed with a London Ale Yeast, London Train-Wreck IPA should add a nicely oakey flavor. Thanks to the Train-Wreck IPAs our brewery now has a flourishing yeast colony that we can use for many of our upcoming brews. 6.78%
Thirsty Monk Early Beer Series Scotland TrainWreck IPA
(American IPA)
Brewed with a Scotch Ale yeast, Scotland Train-Wreck IPA should be a bit sweeter than the rest. All Train-Wrecks have been brewed with Centennial, Amarillo, and Simco hops, then dry-hopped with more Centennial hops. 6.78%
Thirsty Monk Early Beer Series Smurfette
(Belgian Hot Blonde)
This Belgian-style Blonde will allure you with her subtle perfume of peach and banana. Then she'll show off her complexity with a sweet, dry and lingering bitter taste. With her pale-golden color and light body, she'll prove just how approachable she is. Smurfette may be the only blonde in the village, but don't let her distract you to ruin (like she did with our brewer, who forgot to chill her down before he kegged her.) 6.67%
