Darth Monk Imperial Stout!
Batch XVI: A long time ago in a galaxy far, far away.... well not so long ago and in the next room our brewmaster overcame the forces of evil (a broken mash tun) to create this beer. A tremendous amount of dark malts come together to create a tempting aroma of chocolate, coffee and roast. These aromas carry through into the flavor and are balanced by an intense malty sweetness. The maltiness dissipates quickly into a dry finish. Don't be afraid of the dark side as Luke once was. 9.09%

Bent Creek IPA
Brewed in the classic west coast style. Aroma is citrusy with grapefruit. Dry hopped with Simcoe and Centennial
whole hops. Columbus hops set the aggressive bitterness. Multiple additions of Amarillo, Centennial and Simcoe
provide a nice hop flavor. A malty sweet backbone then emerges to provide balance. The beer finishes with a mild
lingering bitterness. This is sure to satisfy any hophead! 6.57% abv

Thirsty Monk Kledis Is The Reason
( American Farmhouse)
Thanks to John Kledis for this fantastic recipe. Chosen by Thirsty Monk as the best Belgian-style ale at Just Brew It! a local home brew festival and competition put on by Just Economics. We have taken the recipe and brewed up a refreshing farmhouse ale. Golden colored with light amounts of spice, funk, sweetness and bitterness that play together nicely. Kledis is the Reason we brewed it! The pleasing light complexity is the
reason we drink it! 7.90%

Thirsty Monk CocoNorm

(American Porter)
Our brewmaster Norm Penn's signature beer, hence CocoNorm. This robust porter is brewed with freshly shaved, lightly toasted, organic coconut.
It has been compared to bathing in a coconut waterfall with a bevy of naked women. Don't let the sweet, mouth-watering, Mounds-like aroma fool you; CocoNorm is smooth, easy drinking, and the masterly blended coconut flavor will delight and amaze you. 6.00%

Beka's Fresh Start Winter Warmer (Winter Warmer)
The New Year is here and so is The New Beer: Beka's Fresh Start. Homebrewer Beka Staron won the Thirsty Monk Brewery's grand opening celebration contest to brew with our Brewmaster, Norm Penn. Together they created a cheery winter warmer to enjoy on a cold winter night. Deep ruby red in color, with the light aroma of molasses and spices. Beka's Fresh Start opens with a soft sweet taste, follows with just a touch of bitterness and spice and finishes with a warm feeling inside. This is the ideal beer for chilly winter days and nights.

Thirsty Monk BLACK WIDOW Belgian Tripel (Tripel) The dangers of beer are varied, but the rarest of them is being bitten by a Black Widow spider. During the making of this Belgian-style tripel, our brewer was threatened by a family of Black Widows nesting on the kegs. Light in body and color, Black Widow Tripel will slowly crawl over you while changing in flavor complexity. Beware of this sweet, tart and slightly funky ale that will lure you in with fruity tastes, then finish you off with a stealthy high-gravity bite. 8.80%

Thirsty Monk KILTED MONK Wee Heavy
( Strong Scotch Ale / Wee Heavy )
Crivens! This is no standard Wee Heavy. Kilted Monk be not far wee bunty men wit trousers. Dark red an rich in color, like a tartan splattered with peat and mud. Syrupy wit choc'let,carmel, and nice sweetness, like molasses and tar. The bitterness and booziness wil het yea like a caber tae de head, so take care. Be yea wearin kilt or trousers, Kilted Monk be darin tae put hair on ye chest an steam in yer head. 9.45%

Thirsty Monk Gerber Rye IPA
(American IPA) New and Old Worlds collide with our Gerber Rye IPA. We've brewed up a nicely hoppy American IPA with 30% rye grain from Germany. The fresh, young West Coast hops tackle against the slow and subtle Olde World rye, resulting in a crisp beer that is bitter and spicy enough for everyone from Grandmas to Grandsons. With a hazy orange color, a slightly smoky aroma, and a gentle yet potent bitterness, this Rye IPA will easily tackle your taste buds and take you away.

Thirsty Monk Cherry Chocolate Stout
(American Stout) This most cordial stout welcomes you with a rich dark color and a fine head resembling coffee with cream. Get a whiff of dark chocolate and the hint of something special. Brace yourself for the chocolate cherry explosion as you take that first sip. It's like biting into a cherry cordial. The balance of sweet and sour cherries see-saws back and forth with a roasty chocolate taste acting as the fulcrum. A light bitterness lingers, leaving you ready to start all over again. 5.83%

Thirsty Monk Early Beer Series Brick Breaker Red
(Irish Red Ale)
Our latest release is just perfect for Asheville's current fall season. What with some days starting off at 50 degrees, heading up into 80, then back down to 40, who can find the right beer to drink? We have, with Brick Breaker Red! The color seems to change as much the leaves in the tree, starting from a reddish tinge in the light to a rich mahogany as you bring it closer to your mouth. The smell of toast and caramel is followed by a lightly sweet and malty taste. There is just the hint of heaviness to an otherwise light and easy-to-drink body. Brick Breaker finishes sweet then slowly transforms to a nice and dry aftertaste. 4.70%

Thirsty Monk Early Beer Series Calibration Ale
(American Blonde Ale)
Our very first batch of beer on the new brewing system. This blonde ale was used to properly calibrate everything. The result is a lightly fruity ale with a nice bitter finish. We think it's OK! 5.93%

Thirsty Monk Early Beer Series California TrainWreck IPA
(American IPA)
When asked how a day of brewing went, our brewer responded, "It's a freakin' train wreck!" Fortunately, there were no fatalities and the survivors lived to tell the tale. Three IPAs were brewed equally, sharing the same wort, hops, and near catastrophic brewing conditions. They differ only in their yeast. California Train-Wreck is brewed with California yeast, which should present a dry finish. 7.17%

Thirsty Monk Early Beer Series Golden Smonky
(Belgian Strong Pale Ale)
We've thrown everything Belgian into this strong golden ale, resulting in a beer that breaks with traditional Belgian styles. Gold in color, fruity with hints of plums and figs, sweet and barely sour, this beer just defies all categories. Is it a Tripel-and-a-half? A golden Quad? Or perhaps the most sought after Double-Blonde? We can't decide... except upon it's deliciousness. 9.30%

Thirsty Monk Early Beer Series Hotwater Hef A\B
(Hefeweizen)
"The chill water is too HOT!!" the brewer exclaimed and worked feverishly to save the beer. The batch was rescued and resulted in two different Bavarian-style Hefeweizens, batch A with Weihenstephaner yeast, and B with a unique blend. We hope these Hefs will be hot (and chilled) beers. 5.52%

Thirsty Monk Early Beer Series London TrainWreck IPA
(American IPA)
Brewed with a London Ale Yeast, London Train-Wreck IPA should add a nicely oakey flavor. Thanks to the Train-Wreck IPAs our brewery now has a flourishing yeast colony that we can use for many of our upcoming brews. 6.78%

Thirsty Monk Early Beer Series Scotland TrainWreck IPA
(American IPA)
Brewed with a Scotch Ale yeast, Scotland Train-Wreck IPA should be a bit sweeter than the rest. All Train-Wrecks have been brewed with Centennial, Amarillo, and Simco hops, then dry-hopped with more Centennial hops. 6.78%

Thirsty Monk Early Beer Series Smurfette
(Belgian Hot Blonde)
This Belgian-style Blonde will allure you with her subtle perfume of peach and banana. Then she'll show off her complexity with a sweet, dry and lingering bitter taste. With her pale-golden color and light body, she'll prove just how approachable she is. Smurfette may be the only blonde in the village, but don't let her distract you to ruin (like she did with our brewer, who forgot to chill her down before he kegged her.) 6.67%
